Tofu Breakfast Scramble

Ingredients:
2.5 oz tofu
2 cups chopped greens
handful cherry tomatoes
1/2 cup chopped mushrooms
1/2 chopped zucchini
1 tsp turmeric
1/2 tsp red pepper flakes
1 tsp basil
1/2 avocado
Directions:
1️⃣ Spray two pans with non-stick spray.
2️⃣ In one pan, add tofu and spices. Mash tofu into desired sized "scramble" pieces.
3️⃣ In the other pan, sauté vegetables with salt and pepper until softened.
4️⃣ Once tofu is browned, mix everything together.
5️⃣ Serve topped with avocado.
